This isn't your issue since it used to be right but on a side note a narrow frame lift rod is a little different and if you had the wrong one that would cause the height issue. I'm not sure I fully understand but like the Quietline? They are closed and get their air from the flywheel housing. If so, just acquiring a few parts will get you what you want.

I'm still 50/50 on building this. The cost, mainly the tines, is going to be a bit unreasonable. I did get it all modeled up though.

The adjusters on it look like a Carter. The adjustable Walbro has the main jet down by the bowl facing downward. Don't know if they consider that a Kohler but doesn't look like a Walbro.

Coil can possibly do that. Usually takes a bit longer though. Poor fuel flow to carburetor? I've had more quietline than anything with sticky exhaust valves with similar symptoms. I'm guessing the shielding traps more heat and is tougher on valves?

Carbon wasn't uncommon. I think there's even a service interval on taking the head off and cleaning. Rebuild kits for a K301 are found about anywhere from cheap kits on ebay, Stens has decent aftermarket kits, or if you plan to use it a lot I recommend spending the extra money and getting OEM Kohler...

It's factory. All the heads were aluminum and blocks cast iron on the Kohlers except the twins maybe? I think I have some literature somewhere that says blocks went to aluminum with cast sleeves somewhere in the 80's on the series after the x82s in 1986. That one could have been a repaint but mtd did sell yellow and white x82 series tractors after 1981 but still made some of them red for the IH dealers to fulfill an existing contract when they bought cub cadet from IH or something like that. Didn't a lot of the old connecting rods have a little keeper you bend over the nuts or bolts when tight? Can't remember if it's Kohlers or other stuff I've torn into. Could be part of that and not affect the engine performance

Looks correct except the part that goes into the 3 pt upper casting. You can buy repro ones if you want it correct or use that homemade one

Yes that's the gearbox and looks correct. The blade looks right too but from the looks of the rear lift on that tractor with gearbox it's on a narrow frame. Might ask him what it came off of. At 350 you can't go wrong. The long belt to the front pto is kind of pricey but I've used a $15 aftermarket ...
